Sumasabay na ang sisig sa kasikatan ng adobo at unti-unting nakikilala sa buong mundo bilang isa sa pinakamasarap na putaheng Pinoy.

Nakabilang ang mga putaheng Pinoy na sisig at adobo sa “100 Best Dishes in the World” ng Taste Atlas ngayong 2021.

Ang Taste Atlas ay isang online international database na nagpapalaganap ng local culinary culture ng iba’t ibang bansa.

Nakakuha ang adobo ng 4.3 stars ratings para makopo ang ika-81 puwesto.

Tinukoy ng Taste Atlas ang adobo bilang "closest thing to a national dish in the Philippines."

Ayon sa website, “The combination of these ingredients [browned chunks of meat (usually pork and/or chicken, sometimes seafood), mixed with white vinegar, soy sauce, bay leaves, garlic, salt, sugar, oil, and black pepper] is left to simmer over low heat, resulting in succulent, juicy, and tender ingredients covered in thick, rich, and savory sauce.

“Adobo got its name from the Spanish word adobar, meaning marinade or pickling sauce.”

Binanggit din ng website na may iba’t ibang variety ang nasabing putahe—maanghang, katamtaman, may sabaw o kaya ay pinaiga o tuyo (dry).

Maaari rin itong dagdagan ng iba pang sangkap, gaya ng sibuyas, luya, tanglad (lemongrass), sili, atsuete, o kaya ay gata ng niyog.

Nakakuha naman ang sikat na lutong Kapampangan na sisig ng ratings na 4.4 stars.

Mas mataas ang ranking nito sa adobo na nasa ika-72 puwesto.

“Originally, sisig had no meat in it, and was first described in a 1732 Kapampangan dictionary by Fr. Diego Bergano as a salad consisting of guava or green papaya,” ayon sa Taste Atlas.

Dagdag pa ng website, “The name of the dish is believed to derive from the word sisigan, meaning to make sour.

“It was used as an early remedy for nausea and hangovers because its sour flavor was considered a vomit suppressant.”

Paboritong pulutan ng mga Pinoy ang sisig.

Iniihaw ang tainga, pisngi, at panga ng baboy, hihiwain nang maliliit saka titimplahan ng asin, suka, paminta at iba pang pampalasa, at ihahalo sa ginisang sibuyas at sili. Nilalagyan din ito ng atay ng manok kung minsan.

Karaniwang binabasagan ito ng itlog sa ibabaw saka ihahain habang umuusok pa.

Para sa dagdag na pampalasa, nilalagyan rin ito ng mayonnaise o sitsarong bulaklak.

Karaniwan ding may sawsawang toyo, kalamansi, at sili.
