Naranasan mo na bang kumain ng fried chicken na golden brown and crispy sa labas, pero hilaw pala sa loob?

Paano nga ba makatitiyak na naluto ring maigi sa loob ang manok?

Narito ang ilang tips mula sa mga kilalang chefs.

NINONG RY: CARRYOVER COOKING

Gumawa ng ganitong content sa Tiktok ang influencer na si Ninong Ry na ang title ay “Paano hindi mahilawan ng manok?”

In-upload niya ito noong June 2025, at nagkaroon ng 10 million views.

Sa video, matapos i-cover sa harina ang chicken parts ay inilubog niya ang mga ito sa mainit na mantika.

Makikita ang pag-sizzle ng mantika.

Ani Ninong Ry, “Hayaan ang tamang kulo ng mantika, at hayaan ito ng 11-12 minutes.”

Pagkatapos hanguin ang manok at ilagay ang mga ito sa rack, may binanggit ang content creator na isang mahalagang step matapos iprito ang manok.

“Kailangan siyang i-rest. Meron tayong tinatawag na carryover cooking.

“Basically, naluluto pa siya ngayon. So, bigyan niyo lang ito ng around five minutes.”

Nakuha raw ni Ninong Ry ang tip na ito sa dalawa niyang staffers na naging crew noon sa fast-food restaurants.

“Meron talagang resting ang manok. Kasama talaga ito sa proseso,” sabi ni Ninong Ry.

GORDON RAMSAY: CONSISTENT HEAT OF THE OIL

Nag-share din ng tips ang British celebrity chef na si Gordon Ramsay sa artikulong inilabas sa Hell’s Kitchen website.

Isang reminder niya tungkol sa pagpiprito ng mga manok: “Keep your oil at a steady temperature; too low and you’ll have oil-logged chicken; too high and you’re looking at a burnt exterior with an undercooked middle.”

Isa pang importanteng tip ay ang paglalagay ng fried chicken sa wire rack na may tissue kapag hinango.

“This little trick circulates air, keeping the bottom as crunchy as the top.”

Binanggit na ang ideal temperature ng mantika kapag nagluluto ng fried chicken ay nasa 350°F and 375°F (175°C to 190°C).

Malalaman naman daw na luto na ang fried chicken kapag ito ay golden brown na at ang internal temperature nito ay 165°F (74°C).

CHEF TATUNG: CHECK THE CHICKEN'S INTERIOR

May helpful tips din si Chef Tatung sa kanyang fried chicken recipe video.

Kapag niluluto raw ang mga manok sa deep fryer sa fast-food restos, gumagamit sila ng frying basket.

“[M]alayo sa heating element kaya even ang cooking kahit hindi na nila galaw-galawin.”

Gumamit ng frying pan si Chef Tatung at nakalubog sa mainit na mantika ang breaded chicken.

Maya’t maya ay hinahalo niya ang manok dahil may bahagi raw ng pan na mas mainit dahil nakadirekta rito ang apoy.

“Possible na mag-darken yung portion ng chiken na tumatama doon. Kaya I always like to move the chicken around so it cooks evenly,” sabi niya.

Pagbabahagi pa ni Chef Tatung, mas madaling maluto ang white meat parts tulad ng breast kumpara sa red meat parts gaya ng thigh, legs, at wings.

“My suggestion is sabay-sabay mong lutuin yung lahat ng red meat parts, at sabay-sabay mo ring lutuin yung white meat parts para sigurado kang tama yung luto ng dalawa.”

Ang dapat daw i-achieve sa pagluluto ng fried chicken ay maging golden brown ang kulay nito.

Paano matitiyak na hindi hilaw sa loob ang fried chicken?

“So we get one piece of chicken to check if its already done.

“We just find a thick portion and we pierce it with a knife.

“So if you let it drip and clean siya—walang blood na lumalabas—it means the chicken is already cooked.”
