For many Filipinos, burgers are the ultimate comfort food.
Whether it's a quick bite after a long day, a late-night craving, or a weekend treat with friends, a good burger rarely disappoints.
That's exactly what Greenlight Burgers by Chef Alvin Cailan aims to offer: well-executed burgers with no unnecessary frills, allowing quality ingredients and flavors to take center stage.
PEP.ph (Philippine Entertainment Portal) visited the increasingly popular burger spot in Bonifacio Global City, where a simple green light has become its most recognizable feature.
During our visit, Chef Alvin, together with Head Chef Ivan Ahmed, shared the story behind the concept, the restaurant's straightforward menu, and the sauces that keep customers coming back.

Why it's called Greenlight Burgers
The restaurant's official name is Burgers by Chef Alvin Cailan, but regular customers know it by a different name: Greenlight Burgers.
With no traditional storefront signage, the burger spot relies on a simple green light to signal that it's open and ready to serve.
Over time, customers began referring to it as "Greenlight Burgers," a nickname that eventually stuck.
Chef Ivan said: "That's the name just given by our customers just by virtue of we have no signage. There's no brand name.
"It's just the green light or the red light. And obviously people are only here when the green light's on. So that means we have burgers and it's time to eat."

While the nickname wasn't originally part of the restaurant's branding, Chef Alvin said he embraced it after seeing how naturally customers took to it.
Chef Alvin told PEP: "It was helpful for our Google profile because it's hard to have a Google profile if you don't have a name.
"So it turned out to be Green Light, and I'm happy with it. I mean, we haven't used the term Green Light on our branding.
"So it's still a light bulb that's green that says burgers on it, which is, I think, so easily digestible for our customers, that it doesn't complicate things.
"It doesn't hold a certain level of pretense or pretentiousness. I like it. I think it's simple. It's very easy. People can really relate to it and that's really the goal."
For Chef Alvin, the customer-created name reflects the restaurant's philosophy of keeping things approachable and uncomplicated.
HOW IT ALL STARTED?
According to Ivan, the concept was born out of desire to keep things simple.
"That's actually the brainchild of the two owners and Chef Alvin, just through their love for burgers," he said.
"I guess they wanted it to be as simple as possible and let the customers know we're open or we're closed.
"We're a spot that focuses on burgers only, and we just wanna do that at its very best."
Chef Alvin said the idea for Green Light Burgers started after he met his current partners during a Department of Tourism trip to the Philippines in 2022.
During that trip, he met the people behind one of the country's most expensive restaurants and became interested in their business model, particularly their direct sourcing of Japanese wagyu.
The conversation eventually led to the idea of a wagyu burger pop-up in 2024.
He recalled: "I go, 'Let's make a burger pop-up.' So we did a burger pop-up, and we featured a single prefecture A5 wagyu burger."
"We did, like, a 3,000-peso burger, and it sold out, and then we did a 5,000-peso burger, and it sold out."
Eventually, they decided to pursue a more accessible burger concept. They found a small space in BGC and built the business around a distinctive idea.
Chef Alvin said: "We just kind of like do something a little bit more simple. But if we do a simple burger place, it has to be a very unique concept.
"If you turn on the green light, we're open. If we turn on the red light, we're closed, but there's no sign."
He stressed: "I didn't want it to be a brand-based burger restaurant. I want it to be a burger experience."
Construction began in second quarter of 2025, and the restaurant opened later that year.
The restaurant's popularity exceeded expectations.
"We didn't know we were gonna be as busy as we are."
GREENLIGHT BURGERS' STRAIGHTFORWARD MENU
The restaurant's commitment to simplicity extends to its menu.
Instead of offering an extensive selection, Greenlight Burgers focuses on a few signature items, each carefully crafted to showcase its take on the classic burger.
When asked to describe the menu, Ivan summed it up in two words: "Very straightforward."
Among its offerings, the Double Thin & Crispy (PHP550) stands out as the bestseller.
The classic smashed burger is known for its contrasting textures, delivering crispy edges while remaining juicy in the center.
Ivan said, "That's our classic smashed burger, crispy on the edges, thick in the middle, and a little bit juicy.
"The Double Thin & Crispy has our sauce, either red, yellow, or green, and our onions two ways: raw and caramelized."

Those who prefer a more stripped-down burger can go for the Double Plain Jane (PHP450).
"The Double Plain Jane's the same way, except it has no sauce."
For customers craving for a heartier burger, Greenlight Burgers offers the Thick and Lacey (PHP500).
Ivan said: "We combine two patties together, and instead of it being two smashed patties, it's one thicker smashed patty.
"It still has those crispy edges, but the middle is a lot thicker. Mas makapal."

Another highlight of the Greenlight Burgers experience is its line-up of signature sauces, each designed to offer a distinct flavor profile depending on a customer's preference.
According to Ivan, part of the fun is being able to choose based on your mood.
"That's the beauty of it, actually," he said.
"You can come here and depending on your mood, you can choose what you wanna eat. Or you can try it all."
The Red Sauce takes inspiration from Thousand Island dressing but comes with a Filipino touch.
Ivan explained, "The red one's Thousand Islands, parang ketchup and mayo tasting, but it's tomato based and it's got a little patis for a Filipino accent."
The Yellow Sauce, meanwhile, delivers a richer, Western-inspired flavor profile.
"It's our more, I'd say, Western style burger with miso and mustard."
For something lighter and more herbaceous, diners can opt for the Green Sauce.
"It's very bright and refreshing, and we use a lot of herbs in it," he said.
For customers who can't decide on just one sauce, Greenlight Burgers offers the Stoplight option.
"We also have what's called the Stoplight, where you choose the burger, we put no sauce on it, and then we get three squeeze bottles, so you can try it each different way."
The setup allows diners to sample all three sauces with a single burger, making it easier to find their favorite combination.

THE VERDICT
Naturally, I tried Greenlight Burgers' bestseller, the Double Thin & Crispy, paired with an order of crisscut fries.
True to its promise, the burger delivered a satisfying bite from start to finish. I first tried it without any sauce, and it was already good on its own.
The smashed patties had crisp edges and a juicy center, making each bite enjoyable even without any added flavor boosters.
The sauces definitely elevated the experience.
Among the signature offerings, I found myself reaching for the Red Sauce and Green Sauce the most.
The Red Sauce tasted familiar and comforting, while the Green Sauce added just the right amount of herby freshness without overwhelming the burger.
The crisscut fries were just as satisfying. They stayed crispy throughout my meal and paired well with the different sauces.

What pleasantly surprised me, however, were the Truffle Sauce and Chipotle Sauce. Both were incredibly flavorful and worked beautifully with the burger and fries.
In fact, they ended up being my personal favorites from the entire lineup.

So while it's worth trying the restaurant's signature red, yellow, and green sauces, don't miss the truffle and chipotle options. They might just become your favorites, too.
