From being a small online business to becoming a full-fledged restaurant earning a Bib Gourmand from the Michelin Guide, the journey of Filipino restaurant COCHI by Marvin Agustin has proven that big wins can start small.
Like many entrepreneurs during the lockdown in 2020, actor-turned-restaurateur Marvin Agustin found himself back in the kitchen. What began as a home-based passion project soon turned into a buzzy restaurant in the metro.

In an interview with Pep.ph, the actor talks about how he launched the business into what it is today. According to Marvin, it wasn’t an overnight success. Rather, it was organic and intentional—built on discipline, systems, and smart scaling.
From Blockbuster Actor to Kitchen Sensation
When the pandemic hit, it unexpectedly sparked a wave of creativity. For Marvin, it started with baking ensaymada, cookies, and brownies, which soon revealed a bigger opportunity he felt compelled to seize.
As orders grew for his baking business, he decided to invest in a larger oven. But there was a catch: it wasn’t being maximized. “Ayoko ng may nasasayang na opportunity,” he says.
That unused space became the turning point. Around the same time, Marvin had been developing his own version of cochinillo, inspired by the one he had in Spain.

While he was learning the technique and refining the process purely out of craving, without the intention of selling it yet, an unexpected nudge came.
“Pinatikim ko sa mga kaibigan ko, and they told me, ‘The pig was divine.’ That answer sparked the idea,” he shares.
Encouraged by the reaction, he decided to post it online. What followed surprised him: orders began coming in almost immediately, marking the beginning of COCHI in 2020.
COCHI’s Homegrown Discipline
Like any startup, building a business from the ground up requires control and precision, especially in the food industry.
With COCHI starting its operations from home, Marvin recalls being hands-on from day one. From production and packing to coordinating deliveries and confirming payments, everything was done manually at first.

“Timing [also] had to be precise. Cochinillo is not forgiving. You can’t rush it… Isang maliit na error, ramdam agad sa quality,” he points out.
True enough, the quality spoke for itself. Word spread quickly, and orders began to pour in. But with growth came a different kind of pressure.
“It wasn’t just about cooking [anymore]. It was coordination, supplier management, cash flow, and customer communication.”
For Marvin, the kitchen evolved into a full-scale operation that required a system behind the scenes. From production schedules and order cut-offs to inventory monitoring and cost tracking, he began standardizing the business processes to prioritize consistency.
“Scaling is not about selling more. It’s about delivering the same experience every single time,” he notes.
When Online Success Called for a Bigger Stage
As repeat customers kept coming in, Marvin began to see something deeper than just steady sales—he saw trust. And that loyalty built the confidence he needed to take the next step for COCHI.
He shares, “[People] would [even] message us and ask if we had a place they could visit. That reassured me that what we were building had staying power.”
Still, a home kitchen has its limits. So Marvin made the decision to open a physical restaurant, honoring the trust his customers had shown him. He kept one guiding principle intact: consistency over speed.
“I wanted to give customers a complete experience, not just good food in a box, but a place where they could gather.”
Scaling Made Easy with GCash for Business
As operations expanded, efficiency became even more critical, especially when it came to payments. In the early days, manual confirmations posed challenges, with delayed logging and human error slowing things down. For a growing business, payment systems had to be seamless, especially for online transactions.
That’s where GCash for Business stepped in. Now, with new payment devices like GCash SoundPay, businesses get voice confirmation for every successful payment anytime, anywhere.

“It reduced back-and-forth messaging and allowed us to focus on production and quality,” Marvin explains.
As COCHI continued to scale, GCash for Business also provided visibility over transactions. Through its portal, Marvin could track sales even off-site, reducing manual monitoring, minimizing errors, and reconciling records accurately. It also helped COCHI enjoy zero transaction fees, further optimizing their operations.
“It made supplier payments and fund transfers smooth." He adds, “Efficiency in payments protects cash flow, and protecting cash flow protects growth.”
With streamlined systems in place and fewer operational hiccups, COCHI could focus on what truly mattered: its team and the quality of their food and service.
The Michelin Moment
In the recently released Michelin Guide Philippines 2026, COCHI by Marvin Agustin earned a coveted Bib Gourmand distinction, highlighting it as one of the must-try local dining spots.
Marvin is deeply grateful.

“You just need to start with integrity,” he reflects, looking back on his journey. “We make almost everything from scratch. We respect the process. We don’t shortcut flavor.”
According to Marvin, it was the prioritization of consistency over speed, the building of systems rather than rushing expansion, and a strong focus on quality control and financial discipline that contributed to COCHI’s profound success.
“Recognition is a result. Consistency is the real work,” he says.
For aspiring entrepreneurs, his advice is clear: “You don’t need a perfect setup. You need clarity and discipline. Use technology. Build systems early. Track your numbers. Respect cash flow.”
And while it’s tempting to chase hype, Marvin warns against confusing busyness with progress: “Standardize your operations. Protect your brand. Stay humble enough to keep learning.”
After all, in both food and business, trust is everything, and it’s built one consistent experience at a time.
COCHI’s journey shows that humble beginnings can lead to meaningful success. With the right systems, discipline, and smart tools like GCash for Business, growth becomes sustainable, and trust follows. In the end, working smart—not just hard—makes all the difference.
